Landlord Appreciation Dinner - 2015

We just wrapped up our annual landlord appreciation dinner over the weekend.  We served nine people and had the most enjoyable evening. There was a new couple in the mix and it was wonderful to see them join right in with the rest of us!  

Our landlords trust us to care for the land and raise crops on their family legacy.  We know that they could lease their land to anyone, so we do our best to care for the land, and let them know we appreciate the opportunity. 

Our annual dinner is just one way we do this. We normally send out a newsletter once a year, plus Christmas cards. Some other farmers we know also send out calendars with photos of the farming that year to their landlords.  I think this is a great idea!  Our farthest landlord resides in California so it's nice to be able to send her things from Kansas!

We decorated the table with fall decor.  PV even helped set the table and prepare for our guests!  I love when she is in the kitchen!  Although as you can see from the photo she is a girl with many talents!  

This is PV the other day repairing the chicken coop door!





















Our menu was the following, I tried to keep it somewhat simple this year as our schedule in October was pretty full! 






















The guests left with a little orange bag in their hands! In their bag they found an embroidered tea towel and jar of jam. The three that were unable to attend will receive a nice little parcel in the mail later this week! :) Hint: it can be used in the kitchen! 

Unfortunately, I do not have any photos of anything from the evening.   I took a few but then accidentally deleted them and emptied my recycle bin before realizing what I had done.  

So, the memories will stay in our mind and look to next year's event!  We hope you enjoyed our little post from the entertaining kitchen today!

Entertaining Kitchen - Mother/Daughter Summer Series - 2015 - Blackberry Cobbler

During wheat harvest our fresh blackberries that I order from Elderslie Farms came in.  PV and I made a quick trip to get them and that afternoon tried another new recipe.  We found on Pinterest Blackberry Cobbler from Five Heart Home.  As always, please be sure to check out the recipe from the link.  The website is beautiful and looks to have lots of great recipes!




This time around I decided it was time for PV to learn to read a recipe.  Normally I just get all the ingredients out and tell her what to add and when.  I had her read it to me and also participate in mixing it up. She did well and so I decided she could make the box potatoes for supper.  We decided to go easy on supper this night so Betty Crocker Au Gratin potatoes it was!  I also made her clean up her mess and rinse the dishes. 






















After we were done she looks at me and asks the following.  

"Mom, does cooking make you relax?"

"Yes, usually."

"Me too."

That makes me very happy! :)  Big joys in little packages! That's what life is about isn't it?





















We hope you enjoy this recipe.  Our family found it to be very yummy with vanilla ice cream! I did cook mine longer than the 30 minutes, it was juicy, but oh so good!

Stuffed Shells

One of my oldest daughter's favorite recipes is Mancotti.  I was whipping up a pan for her birthday this past weekend which inspired me to make stuffed shells.  Normally I would make them just as I had for her Manicotti, but I had some italian sausage in my frig to use up.  So I made stuffed shells for lunch and used the sausage!  Our family enjoyed them for lunch! It will be one we make again!  





















Stuff Shells                                                                                          Print Recipe

1 pkg. large pasta shells
1 jar spaghetti sauce
1/2 pound Italian sausage
1 small container of Ricotta cheese
1 cup Mozzarella cheese
1 cup Parmesan cheese

Cook the pasta shells in boiling water for about 9 minutes. Drain and lay out.  Cook the italian sausage until done.  Mix together the ricotta cheese, 3/4 cup mozzarella, and 3/4 cup parmesan cheese, and the italian sausage.  Pour a layer (about half) of the spaghetti sauce on the bottom of a 9x13 cake pan.  Stuff the cooked shells. Put them in the pan.  Pour rest of spaghetti sauce over all of them then put rest of cheeses over the top.  Bake at 350 for about 20 minutes or until heated through.

Entertaining Kitchen - Mother/Daughter Series 2015 - Decadent Blueberry Almond Coffee Cake

Don't let the title worry you, this recipe is pretty simple.  Most of the ingredients are probably staples in your pantry and refrigerator.  

PV and I made this coffee cake after we traveled one Saturday to pick blueberries at The Berry Patch.  I highly recommend them if you have a desire to purchase blueberries.  It was a jaunt for us but we didn't mind.  We were in the mood for a road trip and a free Saturday in June due to rain!
















This will be one of those cakes we make again and again.  Especially since we have 21.5 pounds of blueberries in the freezer! :)  Also because it includes almond flavor and I love that!

We hope you enjoy the recipe.  It was supplied by another orchard that we stopped at on our way home.  Pome on the Range.  We picked up some absolutely awesome tasting peaches!  They also gave us some advice on how to care for our peach trees we have here at home.  So glad we stopped there too!

Decadent Blueberry Almond Coffee Cake                                   Printable version

2 cups flour
2 tsp. baking powder
1/4 tsp. salt
1/2 cup butter, softened
2 eggs
1 tsp. almond extract
1/2 cup milk
2 cups blueberries

Topping
1 egg white
3 tbls. sugar
1 cup sliced almonds

Preheat oven to 350 degrees and grease a 2 qt. glass baking dish (I used a 13x9 pan)

Sift flour, baking powder, salt and set aside.  Beat butter and sugar until light and fluffy. Beat in eggs and almond extract.  Add flour mixture and milk beating on low speed.  Fold in the berries.  Spread mixture in baking pan.

Prepare topping; lightly beat egg white and add sugar and almonds, stirring to coat.  Spoon mixture over batter and spread evenly.

Bake 45-50 minutes. Cool and serve.

The Beef In Our Freezer & How It Got There


Every year we purchase feeder calves and feed them for the winter.  Normally this runs from October/November to March/April.  We sell the livestock in hopes to make some money, which is never guaranteed. But even if we lose money, we will be able to feed our family beef. The reason is that our family always keeps back a couple head of cattle to have butchered. 

What this means is that we trust the way we are raising our cattle enough to eat the beef ourselves. Both my spouse and I were raised with beef as a staple in our home. (pork just the same) We both feel quite blessed to have such a delicacy as beef in our meal plan. Feeding our family beef from our own farm has a rewarding feeling to it as well.

Some of you may be thinking it's "free beef" for our family. Well it's not and I want to share with you just how much a heifer costs these days. This year cattle are/were at an all time high, over $1,000 per head.  Then we have expenses of feed, vet bills, and to have it processed to eat. 

In farming there is risk as well as feeding cattle.  Here's a peak into our situation in the past. This year alone we lost six due to various illnesses. It wasn't by lack of care or us not treating them when ill. It just happens and we have to trust that it will all work out in the end. To help you understand our risk, we lost approximately $6,000 that we never recouped.  All from some of the cattle dying.

This blog is to educate and we believe that educating means putting oneself out there to some degree.  If that means we need to share some dollar amounts, number of acres, or a tad of personal information to get the point across we will.  That's why we are sharing that previous information which some might seem too much.  Now that we said that, let’s get back to the process of getting beef into the freezer! 

After the couple head of cattle have been fed till late June they are loaded up and taken to our local locker.  No, not a gym locker, it's a beef locker or butcher shop or slaughtering house. Whatever you call it in your neck of the woods, around here we call it a meat locker.

At this location the animal is butchered and the meat is cut to our desire.  We pay the meat locker to process the beef.  Our white packages are ready for pickup approximately 2 to 3 weeks after the cattle is hauled to the locker.  
















The cattle vary in weight and the amount of beef can be distributed in sections such as a quarter, half, or full. To see how the beef can be cut you might want to check out Angus Beef Chart.  I found it interesting to see where my roasts, steaks, and other types come from on which part of the heifer.

Our family of three normally gets a quarter of beef. On occasion we split another quarter of beef if it’s available. Our family eats this type of meat often and we cook at home a great deal.  Our diet also includes chicken and pork but those are bought at the grocery store. 
























One of the reasons we chose to write this piece is to share that we do treat our animals if they are ill, and we do vaccinate them when they arrive.  We eat beef from the same herd of cattle that we sell from.   We find reward and pride in the fact that we can feed our family and others quality meat.  

Our philosophy is that each person is entitled to their own opinion.   For every person that wants to eat meat there's probably one that doesn't.  For every person that wants to only partake in hormone free/antibiotic free (Insert your choice of meat), there is a family down the road that would just like to feed their family anything other than rice and beans.























We find in this world today many people are being disrespectful, not telling truth about farming practices, and listening only to what is in their newsfeed.  They don't take the time to educate themselves prior to sharing a post that pops up in their newsfeed. It's not everyone but it's a lot of people. Please research before you share or believe completely based on what social media or media tells you.    

Our blog is here to tell a legacy, a story, inform about our farming operation, and to bring rural living into a home of someone not currently associated with it.  We will stand up for what we feel is right and the truth, but we will do it in a respectful manner.  We will educate ourselves to provide accurate answers.  We only ask the same from others.

Entertaining Kitchen - Mother/Daughter Summer Series - Lemon Blueberry Bread

I personally love the taste of lemon and blueberry together and my sister shared a great recipe with me last week!  I had a sample of this recipe when she made it and I fell in love!  

This week PV and I made it as one of our recipes to try for the Mother/Daughter Summer Series.  I measured all the ingredients out and she did the mixing!  It was quick and easy too!

Entertaining Kitchen - Mother/Daughter Summer Series - Apple Crisp

This is the first summer that I am not working full time since PV was born.  We are both looking forward to spending the summer doing fun things together.  

One of the activities I hope to do with her is spend time in the kitchen.  I want to teach her some basics, cook and bake together, and try some new recipes.  I might even  designate one night her night to cook supper!

As you can tell from the title of the post I am creating a new series to include our summer kitchen activities!  It is going to probably be random but they will all be named Entertaining Kitchen - Mother/Daughter Summer Series.


Today we started by trying an Apple Crisp with Oat Topping recipe.  You can find the original recipe over at Allrecipes.com.    


My daughter loves apples, cinnamon, and sugar.  Separately!  She did take two bites with pushing from me and still disliked it.  The kid is crazy I think! Her Dad and I enjoyed it with ice cream!

Chocolate Chip Muffins


Don't fall off your chair. Yes I actually wrote a post over here at the Sunsets! I had to, these are too easy and good not to share!  I've made them twice for PV now and she loves them.  I suppose it's because there are chocolate chips involved!

Chocolate Chip Muffins 1

I love that website! Do you ever try recipes from there?

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 cup white sugar
1/2 teaspoon salt
1 cup milk
1 egg
1/3 cup butter, melted
1 cup semisweet chocolate chips


Preheat oven to 350 degrees. Line 12 muffin tin cups.

In a large mixing bowl, combine the flour, baking powder, sugar and salt. Stir in the milk, egg, butter and chocolate chips. Pour batter into prepared muffin cups.


Bake in preheated oven for 15 to 20 minutes, until a toothpick inserted into the center of a muffin comes out clean.

By the way, I only used about 1/2 cup to 3/4 cup chocolate chips.  The entire cup was too much for us!

Seriously my kiddo loves them and I bet yours will too!

Off The Farm Night! Zest & Zing

Milton & I had an evening off the farm recently! We attended an event called  Zest & Zing













When I saw the advertisement for it I jumped at the chance to attend for a couple reasons. One was the fact that there was a chef vs. chef competition. The other is it brought farmers and foodies together! Milton and I both enjoy watching these type of events on television together and watching one in person was even better!  It was sponsored by Kansas Farm Bureau, United Soybean Board, and the Kansas Soybean Commission.

The evening included delicious appetizers, a couple free drinks, and a pretty sweet swag bag!  But the best part was the chef vs. chef competition and hearing the farmers speak about their farms. 






















The two chefs had very different styles so I am glad I was not the judge! We watched Chef Paul, who is the Executive chef at the Hyatt, create with smoothness as if taking care of a well oiled machine with each dice and tenderizing.  He prepared in round one a stuff flat iron steak, it looked awesome!  Chef Patrick, who owns the Doo Dah Diner,  worked hardily at creating a flat iron steak with a hash with  beautiful egg for the topping! It looked hearty and something right from his diner, true to his form!












The second round included wheat germ, and the surprise ingredients were jalepenos and vienna sausages.  Yes you read that right folks, vienna sausages!  

Chef Paul created a beautiful stuffed crepe! The greek yogurt
is made by him at his restaurant.  He makes about 35
gallons a week!

Chef Patrick made a stuffed mushroom with the ingredients.
It looked delish!


































The two master of ceremonies were the following individuals.  They were Chef Alli and Katie Stockstill.  You can find their websites by clicking on their names.  It was nice to listen to them and they kept the show going!






















As the chefs prepared their dishes, the farmers were able to talk to us about life on their farms.  They also answered questions and welcomed visitors to the farm.  This type of event I believe is good for both agriculture and non-agriculture folk.  It brings insight into what one may not know on both sides.

There were three judges and at the end of the evening they announced the chef that had dazzled their tastebuds the best!  Chef Patrick of DooDah Diner won!  I was secretly rooting for him because we had just ate at his diner the Saturday before for the first time!

The evening was fun and I got to see one of my friends while there and spend time with my husband away from the farm!  I highly recommend you ask a couple friends and go to the next Zest and Zing event! You won't be disappointed!

VVDDP - 2015 Edition - Recipes

Our menu for the 2015 VVDDP gathering was one of simplicity and yet offered flavor!

We chose to serve soup verses salad this year.  
The weather has been cold and we thought a hearty 
thick soup would be delightful! Although the rescheduled date we actually served it ended up being beautiful spring-like weather.  It was still a good choice we feel!


The main course included chicken and broccoli.  
We kept the main course light so we 
could enjoy the two desserts 
that were on the menu!

We chose to serve two desserts. 
One was sugar free and the other included chocolate.  
Both were ones we will make again for sure!

VVDDP - 2015 Edition

Our annual couples gathering for February had to be rescheduled to this past weekend due to weather.  We were thrilled that all the couples were still able to make it in March and the day couldn't have been more beautiful outside!  We kept the menu simpler as our focus was more on spending time with friends.   The table decor was spring like as well!






There will be a follow-up post with all the recipes 
and links to where  I found them. I have to admit this year was simpler but was not without taste! I have found a go to chicken recipe for the grill I know we will make again!  


My favorite part of the gathering was the games.  Our friends DD and JD did a GREAT job of preparing a super game (s)!  I won't share all the photos but I will tell you we were all laughing having quite the time!  I now have a few games to do at future other gatherings!


It was such a nice day that a couple of our guests drove their beautiful vehicles.
So we took our annual group photo with them!

I want to talk about the games for just a moment. 
 It was like the game Minute to Win It. 
 Did I mention how much fun it was?  
We did several different ones.  
Here's a little information on each.

One used conversation candy hearts, while another 
used candy corn and a paper plate.  
How about pasta and spaghetti!




Oh and the one with all our hot air!
My sister won this round!


I think my sister cheated, she used the end of the counter!
Then there was the one where 
the guys used pantyhose and pennies! 
 The guys had to wrap us girls in crepe paper too. 
 Those photos are hilarious 
but I better not post them, my friends 
might not come next year!




And the only reason I am allowed to show 
this next photo is because my husband was the 
winner of this round!  
Yep, he's got talent! 
He can get a cookie from his forehead 
to his mouth without using his hands!



The couple that won with the most points was MG & LG.  They have been married for 24 years, but this game it took skills, not years! Apparently they had the best and their prize was awesome from DD & JD!  A Gratitude Smash Book!  
We all got little prizes, which ours was a piggy bank that had LOVE BANK on the backside! :)

Our menu for the gathering is below.  

My sister and her husband brought an assortment of cheese, grapes, and crackers for us to munch on.  I had some mushrooms I needed to get used up as we were heading out of town the next day, 
so I whipped up my recipe for stuff mushrooms!

Milton & I were very pleased with the meal.  It was good tasting, healthy, and fun to prepare.  We look forward to start planning our 2016 gathering!
